Recipe for Oat Risotto




All of sudden it became twenty degrees cooler than normal here.  It's in the 70s.
So we made some warmer foods the other day.
Below is a tasty recipe for a risotto.



Oat Risotto

My spouse made an oat risotto.  It is gluten-free.  The link goes to the recipe at Food 52.
He did some things differently.  
He used homemade chicken broth.  He also eliminated the Parmesan cheese.  
In fact, he did not mix any cheese into the risotto, and it was still the correct consistency.  
Instead when he served it, he used a sprinkle of grated balsamic bella vitano cheese. ( It is sort of similar to asiago.)
I think it would have been too heavy otherwise.
It was tasty and we definitely will make it again, because it was easy.

  7. I make risotto quite often, but I've never tried an oat risotto. It's so funny to think that 70° is cool to you, because here in Brittany it's high temperature!!!

    1. It is funny. I'm the opposite of you in regards to weather. Instead of fainting from heat, I would freeze from cold. One of my sisters thinks she needs her parka in the morning. I do need a coat. It cooled down so suddenly, that in the mornings I've been sitting with a blanket wrapped around me.

      I think what happens is that your blood becomes thin from living in such heat. My parents moved back east, and I can't wear enough clothes even if I visit in May.
